This is the perfect light and refreshing salad that pairs wonderfully with main dishes like chicken or beef. The tomatoes are marinated ever so perfectly with oil and balsamic vinegar and are paired with spicy red onions.
Ingredients -
40 Cherry Tomatoes
1/4 Red Onion
1-Tablespoon Extra Virgin Olive Oil
2 Tablespoons Balsamic Vinegar
3/4-Teaspoon Sea Salt
2 Tablespoons Dark Soy Sauce
Freshly Ground Black Pepper, to taste
Fresh Basil Leaves, roughly chopped
Preparation:
Slice the cherry tomatoes in half lengthwise.
Place them in a mixing bowl.
Julienne the onion thinly then chop in half.
Place the onions with the tomatoes.
Drizzle the extra virgin olive oil, soy sauce and balsamic vinegar over the onions and tomatoes and add salt and pepper.
Mix everything well and let it marinate for 15 minutes before serving.
Garnish with the basil leaves.

Try adding 1/2 tablespoon of sesame oil to the mixture. It give it a nice nutty Asian taste that is delicious.

Try layering a few basil leaves on top of each other and rolling them up tightly. They you can chop them and they come out nice and pretty julienned leaves.
