Crepes with Banana Flambé

Crepes are very simple to make and very delicious. They can be paired with a multitude of different items. In this recipe we are going to fire up some tasty bananas for a dessert that will wow your family and friends.

Ingredients -

7 Eggs, (5 whole, 2 whites)
2 1/2 Cups Whole Milk
1 1/4 Cups All-Purpose Flour, sifted
1/8 Teaspoon Salt
Butter, (for non-stick pan)
4 Ripe Bananas
1 Cup Dark Rum
1 1/2 Tablespoon Butter
Vanilla Ice Cream for Serving

 
Preparation:

For the Crepe:

  1. Whisk the eggs until they are light and fluffy.
  2. Add the whole milk, flour and salt.
  3. Whisk until the mixture is thoroughly blended.
  4. Heat a non-stick 9 inch pan on medium high heat.
  5. When the skillet is hot spread 1/2 teaspoon of the butter and ladel just enough batter to thinly cover the entire pan.
  6. Wait just under 1 minute until the edges crisp upward and gently flip over.
  7. Cook for another 30 seconds on the other side.
  8. Set aside on a serving plate either rolled or folded in quarters.
  9. Repeat for rest of batter.

For the Flambé:

  1. Slice the bananas into 1/4 inch thick diagonal pieces.
  2. In a sauté pan, heat the butter on high heat.
  3. Add the bananas and sauté until golden brown
  4. Add the rum and remove from the heat.
  5. Using a long barbecue lighter, carefully flame the rum away from heat, ventilation and face.
  6. Move the bananas around in the flames; (flames will die down in a minute by itself.)
  7. Pour the bananas over the crepes and serve warm with vanilla ice cream

Recipe Variation

When you have finished preparing the bananas flambé and you add the ice cream, try drizzling warm caramel or chocolate over the top. It’s delicious and just adds to the presentation of this elegant dessert.

Banana Tip

It’s best to choose a banana that is ripe but still firm. You don’t want to use an slightly old and brown banana because it does not hold up to the heat as well and they usually have some unattractive brown spots.
