Garlic Cilantro Prawn Skewers

These are the perfect appetizer for a gathering of friends and family and they are great as finger food before the meal is put down. If you add more shrimp to the skewers then you can serve them as the main dish. Make sure not to overcook them or they will get rubbery.

Ingredients -

1 Small Package of Bamboo Skewers
28 Large Prawns
14 Cloves Garlic, finely minced
10 Kafir Lime Leaves
1/4 Cup Extra Virgin Olive Oil
2 Cuts of 2 inch Lemongrass Stalk, pounded to soften
Juice of 3/4 Lime
1/2 Teaspoon Sea Salt
Fresh Ground Black Pepper
2 Tablespoons Cilantro
Wooden Skewers

 
Preparation:
  1. Preheat the oven to broil.
  2. Soak 14 skewers in warm water.
  3. Clean, peel and devein the prawns.
  4. Place them in a large bowl.
  5. Wash and rinse kafir lime leaves.
  6. Mix together all of the ingredients thoroughly in a medium bowl.
  7. Let the prawns marinate for 30 minutes.
  8. Slide 2 prawns into tight curls for each skewer.
  9. Place the skewers in a non-stick bake pan and save the remaining marinade.
  10. Broil for 2 minutes or until the prawns are bright pink.
  11. Take the bake pan out of the oven, turn the prawns over and broil for another 2 minutes.
  12. Bring the remaining marinade to a gentle boil then place it in small dipping sauce dishes.
  13. Arrange the skewers on a platter along with the dipping sauce.

Kafir Lime Leave Suggestion

Sometimes it is difficult to find Kafir lime leaves in the local market. They are easily found in Asian markets. If you can’t find some then you can substitute 1 tablespoon grated lime peel.

Wooden Skewers

t’s important that you soak your wooden skewers in warm water for at least 1/2 hour before you assemble your kabobs and put them in the oven. This way they won’t burn but stay nice so that your meat cooks properly.
