Garlic Pepper Chicken with Mango Green Bean Salad

This is a terrific recipe for garlic pepper chicken with mango green bean salad. It’s tender and buttery and makes the perfect marriage with the sweet and tangy mango green bean salad.

Ingredients -

6 Chicken Thighs, bone in and skin on
8 Garlic Cloves, thinly sliced
1/2 Teaspoon Whole Black Peppercorns
2 Tablespoons Canola Oil
2 Tablespoons Butter
1 1/2 Lime, juice extracted
3/4 Pound Green Beans, ends trimmed and chopped in half
2 Medium Ripe Mangoes
2/3 Cup Balsamic Vinegar
2 Tablespoons Extra Virgin Olive Oil
4 Teaspoons Salt, divided
Fresh Ground Black Pepper, to taste
1/2 Cup Mint Leaves; loosely chopped
1/2 Cup Water

 
Preparation:
  1. Sauté the garlic and peppercorns in canola oil and butter on medium high heat for 2 minutes until the garlic is very fragrant.
  2. Place the chicken skin side down and cook for 5 to 7 minutes until skin is golden and crisp.
  3. Turn the heat to medium low and flip the chicken over.
  4. Add the lime juice, water, 2 teaspoons salt and ground black pepper.
  5. Simmer gently for 12 minutes depending on thickness of the chicken.
  6. While the chicken is braising, in another pot bring to boil enough water to cover the green beans.
  7. Once the water has come to a rapid boil, turn the heat off and immediately blanche the green beans in the water for 1 to 2 minutes until just tender but still very crisp.
  8. Drain the green beans and set aside in large mixing bowl.
  9. Peel the mangoes and slice them into bite size pieces.
  10. Set the mangos aside with green beans.
  11. Toss together the green beans, mango, mint, olive oil, balsamic vinegar, 2 teaspoons salt and freshly ground black pepper until thoroughly mixed.
  12. Arrange the green bean mango salad on a serving plate.
  13. Take the chicken off the heat and place one piece of chicken per plate.
  14. Drizzle several spoonfuls of the remaining sauce from the chicken on top of chicken.
  15. Garnish with the mint leaves.

I like to leave a few mint leaves for garnish. It’s always nice to brighten up any dish with some beautiful fresh herbs and it just shows a little more pride in the look of your dish to add little touches.

Chicken Idea

If you are more partial to chicken breasts you can go ahead and switch out the dark meat for the meat of the chicken breast. You will just have to adjust the cooking time based on the thickness of the breast.
