Garlic Wasabi Mashed Potatoes

This is a terrific and spicy twist on one of the most classic dishes ever created. By adding the wasabi to the delicious garlic mashed potatoes brings a heat that is sure to clear out your sinuses.

Ingredients -

8 Medium Sized Idaho Potatoes, washed and scrubbed thoroughly, peeled and chopped into bite-sized chunks
10 Cloves Garlic, finely minced
1 1/4 Cup Chicken Broth
2 Tablespoons Butter
2 Tablespoons Extra Virgin Olive Oil
3 1/4 Teaspoons Salt
2 Heaping Tablespoons of Wasabi Paste

 
Preparation:
  1. Fill a large pot with enough water to cover the potatoes and bring to boil.
  2. Boil the potatoes for 15-20 minutes or until fork tender.
  3. Drain the potatoes but do not rinse them.
  4. Place the potatoes in a large bowl.
  5. Add the chicken broth, salt , butter, olive oil and garlic.
  6. With a whisk, mash the mixture together until any lumps have dissolved.
  7. Finally fold in the wasabi paste until well mixed.

Never substitute margarine in your cooking. The flavor between that and butter is huge and makes a big difference in the texture and taste of your meals. Butter is a lot more healthy for you as well since it does not contain artificial ingredients.

If you would like to make this delicious dish a dish for vegetarians you can switch the chicken broth with vegetable broth and it tastes just as wonderful.
