Grilled Halibut with Cilantro-Lime Butter

This is a wonderful halibut recipe that is moist, tender and covered in amazing cilantro-lime butter. It tastes great and is very good for you.

Ingredients -

3 Large Halibut Steaks, 1 inch thick and cut in half lengthwise
Marinade
3/4 Cup Soy Sauce
3/8 Cup Sesame Oil
2 Tablespoons Fresh Ginger, minced
1/4 Teaspoon Red Pepper Flakes

Cilantro-Lime Butter
1/2 Cup Dry White Wine
1/2 Cup Bottled Clam Juice
2 Tablespoons Rice Wine Vinegar
4 Cloves Fresh Garlic, minced
1 Tablespoon Fresh Ginger, minced
1/2 Cup Cilantro Leaves, packed
1 Teaspoon Lime Zest
2 Tablespoons Lime Juice
1/2 Cup Butter
Red Pepper Flakes, pinch
Rock Salt
Fresh Ground Black Pepper
Corn Oil

 
Preparation:
  1. Lay the halibut steaks in a single layer in a glass baking dish.
  2. Combine all of the marinade ingredients and pour over the halibut.
  3. Marinate the fish in the refrigerator for 4 hours, turning once or twice.
  4.  To make the sauce, in a small saucepan reduce the clam nectar, dry white wine and rice vinegar together until they are almost  a syrup (watch carefully, as this burns easily toward the end).
  5.  Set aside.
  6. Using a processor, puree the ginger, cilantro, garlic and lime zest.
  7. Add the butter in small chunks and puree until the mixture is smooth. With the machine running, drizzle in the lime juice and the red pepper.
  8. Season the mixture to taste with the rock salt and fresh ground black pepper.
  9. Refrigerate.
  10. Prepare the charcoal barbecue grill with oil. Remove the steaks from the marinade, pat dry and and oil both sides lightly with the corn oil.
  11. Lay the steaks carefully on the grill.
  12. Cook for about 4 minutes per side, basting with the marinade on each turn.
  13. While the steaks are cooking, gently reheat the wine reduction.
  14. Take the mixture off the heat, add all of the cold flavored butter and stir it with a wooden spoon to emulsify.
  15.  Give the pan a little more heat if necessary to incorporate the butter, but do not allow the butter the boil or it will separate from the sauce.
  16.  Remove the steaks from the grill and put them in the dish you plan to serve them on.
  17. Pour some sauce over each steak and garnish with a wedge of lime and a cilantro sprig.

Halibut Suggestion

If you want to make this dish extra delicious I would suggest going to purchase the halibut steaks at your local “fish market”, instead of buying it at the grocery store. Grocery store fish is shipped in and usually frozen then thawed. Local fish markets get their fish fresh every morning.

Lime Suggestion

It’s best to use fresh limes in this ingredient instead of the store bought kind. You can get at least 2 tablespoons of fresh lime juice out of one lime. Place it in the microwave for 20 seconds then roll it on the countertop several times to release the juices. Then just cut in half and squeeze it upside down into you dish so as to not get any of the seeds in the mixture.
