This is a delicious recipe for tender, sweet and savory pork loin. It’s healthy because there is very little oil used and the flavors of the marinade come bursting out of every bite.
Ingredients -
4 Pork Loin Chops, boneless
8 Tablespoons Maple Syrup
2 Heaping Tablespoons Grainy Dijon Mustard
1 1/2 Teaspoon Salt
1/2 Teaspoon Fresh Ground Black Pepper
1/2 Tablespoon Vegetable Oil
1 Tablespoon Parsley, finely chopped, to garnish
Preparation:
Trim off all excess fat from the pork chops.
Place the chops in a large dish to marinate.
Pour maple syrup over the pork, making sure to coat both sides.
Spoon the Dijon mustard evenly over pork on both sides.
Make sure the pork is covered evenly in syrup and Dijon mustard.
Season with salt and pepper on both sides.
Let the pork marinate for 20 minutes.
Heat the oil in a non-stick skillet on medium high heat.
Carefully place the pork in the skillet.
Cook for 2 minutes or until golden brown.
Turn the heat down to medium.
Continue cooking for another +/-3 minutes (depending on thickness of pork chop).
Save remaining marinade.
Turn over the pork and cook for another 3 minutes.
At the last minute drizzle the remaining marinade over the pork in the skillet .
Serve garnished with chopped parsley.

This marinade is really great on chicken and steak as well. It’s fun to have a BBQ, and throw all three on the grill with different marinades and a fresh garden salad for some good eats.

It’s best to use a high quality grade of maple syrup. Pure maple syrup is the best. Try to stay away from the really commercial syrups, they are made with a lot of additives.
