Mushroom Medley

Mushrooms have long been overlooked for their nutritional value. In fact they are packed with a certain antioxidant and potassium which is a blood pressure lowering mineral. Recent studies have shown that this very low cal food may have the potential to fight certain cancers and boost the immune system. This is a fabulous side dish that adds depth to any meal.

Ingredients -

1 Package of White Button Mushrooms, 8 ounce
1 Package Baby Portobello’s Mushrooms, 8 ounce
1 Package of Fresh Shiitake Mushrooms, 8 ounce
12 Cloves Garlic, finely minced
1 1/2 Tablespoons Extra Virgin Olive Oil
2 Tablespoons Butter
1/2 Teaspoon Sea Salt
Fresh Ground Black Pepper, to taste
Fresh Parsley, finely chopped

 
Preparation:
  1. Clean all of the mushrooms with a damp paper towel.
  2. Remove the stems from them all.
  3. Chop the button mushrooms into quarters and set aside.
  4. Chop the portabellas mushrooms and the shiitake mushrooms into thin slices and set aside.
  5. Sauté the garlic in oil and butter on high heat until lightly golden and fragrant.
  6. Add the mushrooms and stir gently and quickly (careful not to stir too much).
  7. Let the mushrooms sit for 2 minutes.
  8. Give the mushrooms a quick stir until a golden light crust appears on the edges.
  9. Take them off the heat.
  10. Add the salt and pepper.
  11. Stir.
  12. Garnish with the fresh parsley.

Mushroom Tip

Never wash your mushrooms. Always wipe them down with a damp paper towel. Getting mushrooms wet makes them rubbery when cooked.

These mushrooms are perfect paired with a nice steak, baked potato and a light and fresh garden salad. Fire up the grill and have a feast.
