Pan-fried Flounder on Spring Greens

Though salads are great for us they can sometime become a little boring. By adding this delicious flounder it makes a boring salad to become a salad you won’t forget.

Ingredients -

4 Flounder Fillets
1 Cup All Purpose Flour
1 Bag of Mixed Spring Greens, washed and thoroughly drained
2 Green Onions, finely chopped
1/2 Tablespoon Parsley, finely chopped
1 Teaspoon Paprika
1 Teaspoon Sea Salt
3 Tablespoons Extra Virgin Olive Oil
{For the Dressing}
1/4 Cup Balsamic Vinegar
1/2 Cup Extra Virgin Olive Oil
1/2 Teaspoon Sea Salt
1/2 Teaspoon Fresh Ground Black Pepper

 
Preparation:
  1. In a large bowl mix the flour, parsley, paprika and salt.
  2. Heat the olive oil in a non-stick skillet on medium high.
  3. Dredge the flounder fillets in the flour mixture.
  4. Make sure you coat the entire fish thoroughly.
  5. Gently shake off the excess flour from the fish before placing it in the pan.
  6. Pan fry the fillets for approximately 2-3 minutes on each side, depending on the thickness of the flounder.
  7. Arrange the spring greens on your serving plates and layer the fish on top.
  8. Wisk the olive oil, salt, pepper and balsamic vinegar until smooth and well combined.
  9. Sprinkle the scallions over the fish and spring greens.
  10. Drizzle the balsamic dressing generously over the top.

Make up a big batch of the dressing. You can use it as marinades on your choice of meat or fish, or as salad dressing again. It will keep in the fridge for up to a few months.

If you want to kick this recipe up a crunchy notch, instead of dredging the flounder in the flour, whip a few edges up and roll the flounder into the beaten egg. Then dredge the fish in some Japanese Panko crumbs. Then follow the directions as described.
