Stir Fry Pork with Ginger

This is a great and simple dish and is very satisfying and fulfilling. The recipe smells fresh and fragrant. It is recommended to serve with some nice Chinese rice. If you are health conscience try cutting back the vegetable oil to 1 tablespoon instead of two.

Ingredients -

2 Tablespoons Vegetable Oil
Fresh Ginger Root, thinly sliced, 1/2 inch pieces
1/4 Pound Lean Pork, thinly sliced
1 Teaspoon Light Soy Sauce
1/2 Teaspoon Dark Soy Sauce
1/2 Teaspoon Sea Salt
1/3 Teaspoon Sugar
1 Teaspoon Sesame Oil
1 Green Onion, chopped
1 Tablespoon Chinese Rice Wine

 
Preparation:
    1. Heat oil in a large skillet or wok over medium-high heat.
    2. Fry the ginger in the hot oil until it is fragrant.
    3. Add the pork, light soy sauce, dark soy sauce, salt, and sugar.
    4. Cook for 10 minutes stirring occasionally.
    5. Stir in the sesame oil, green onion, and rice wine.
    6. Simmer until the pork is tender.

You can substitute chicken, shrimp or beef in this dish and it is still absolutely wonderful.

Purchasing ginger for recipes, though great in the dish, hard on the pocket book. Ginger is usually around $4.50 a pound. We don’t usually use a ton in any given dish, so ginger goes bad because we can’t use it all. FREEZE IT! Put it in a sealed airtight container and it will keep for up to 3 months.
