Chinese seasonings are combined with maple syrup, Thai chilies and paprika. This is a terrific fusion which is a great variation on the typical Asian chili sauces.
Mix together the chilies, maple syrup, vinegar, sherry, soy sauce, ginger, garlic, pepper and paprika.
Simmer the mixture in a saucepan, stirring frequently over low heat until thickened (about 30 minutes).

If you can’t find Thai chilies in your local grocery store, you can either head to an Asian market, or substitute the Thai chilies with Serrano peppers. Leave in the seeds.

Sherry Tip
If you don’t have any sherry then you can substitute a very dry white wine. If you don’t want to use alcohol at all you can substitute vinegar, sugar and a dash of lemon juice or a mixture of apple, or cranberry and grape juice.
